Gluten/Dairy Free ''Cheese'' Cake

Cheesecake. Mmmm. CHEESECAKE :D Anyone else loves this dessert? I for one, loves a good piece of cheesecake but it always leaves me feeling bloated and gassy.. And get a sugar crash afterwards! So is this deliciousness worth the aftermath? Not so much.. One thing you need to know about me is that I LOOOOOOOVE baking and coming up with healthier version of recipes. I have been trying to perfect a dairy and gluten free cheese cake and it is AMAZING! I hope you Enjoy :)

Ingredients

2 cups of gluten free ginger snaps crumbs ( 1 bag of Mid-Del Ginger Snaps)

4 tbsp margarine

2 containers of Daya Cream Cheeze (or any other Vegan cream cheese)

1/4 cup of maple syrup

1/4 cup sugar

4 eggs

1/3 Vegan sour cream (this can be hard to find.. alternative : 1/3 cup plain coconut or almond or soy yogurt)

1 tsp vanilla extract

3 cups of frozen raspberries or blueberries or any topping of your choosing

1/2 cup water

1/4 cup sugar

2 Tbsp lemon juice

2 tbsp Cornstarch

How to make it!

1- Preheat oven 350oF

2- Grease a circular pan with margarine and set aside

Crust:

3- Put the ginger snaps in a plastic bag and crush.

4- Combine the ginger snaps crumble and the margarine in a mixing bowl

5- Press the mix evenly in the bottom and sides of the pan

6- Place in the oven for 5 minutes. Take out and set a side.

Filling:

7- Using a hand mixer (or standing mixer) beat the dairy free cream cheese in a large mixing bowl until smooth

8-Add the maple syrup and sugar and continue mixing until smooth (about 2-3 minutes)

9-Add the eggs and beat until fully combined, then add the dairy-free sour cream (or plain yogurt) and the vanilla.

10- Pour the filling into the prepared crust and bake for 60-70minutes

11- Let it cool for 1 hour then transfer into the fridge for at least 2 hours

Topping:

12- Combine the water, sugar, lemon juice and frozen berries of your choosing in a pan and bring to a boil.

13- Add the cornstarch and reduce heat. Stir well until mixture thickens (approximately 5 minutes)

14-Add the topping on the cheesecake and let it cool.

15-Enjoy with no guilt and no bloating!!!
